What Is Salt Bread?
Salt bread, or shio pan, is a small bread roll made with a dough that’s softer than croissant dough.

Bakers hand-roll the dough.

Place a small piece of butter inside.

And shape it into a mini crescent. After that, the dough goes into a proofer so it can rise properly before baking.

Once it’s ready, they sprinkle a bit of salt on top and bake it until the outside gets a light crisp while the inside stays soft. The result is something between a croissant and a soft white roll, with a light butter flavour and a gentle saltiness.

Where Does Salt Bread comes from
Even though most people associate it with cafés in Korea, salt bread actually began in Japan in the 1970s.
It faded for a while, then made a full comeback when Korean bakeries revived it. Social media pushed it even further, and now it’s one of the most requested items people ask me about.
